Our Green Approach and Sustainable Resources

What is sustainability?
Sustainable agriculture is one that produces abundant food without depleting the earth’s resources or polluting its environment. Sustainable agriculture integrates three main goals--environmental health, economic profitability, and social and economic equity. A variety of philosophies, policies and practices have contributed to these goals. People in many different capacities, from farmers to consumers, have shared this vision and contributed to it. Despite the diversity of people and perspectives, the following themes commonly weave through definitions of sustainable agriculture.
Sustainable practices lend themselves to smaller, family-scale farms. These farms, in turn, tend to find their best niches in local markets, within local food systems, often selling directly to consumers. We believe in supporting the local economy. We believe in buying from farms that support sustainable farming practices. In our kitchen everything is recycled. If our pigs don’t eat it, we compost it! Our pigs are happy critters who live in an open pen and live off the scrapes from our kitchen. They are supplemented with organic grain and just before we slaughter them they graze on local acorns. We make our own sausages and charcuterie and render the fat for our own lard.

    The Sustainable Table celebrates sustainable food movement, educates consumers on food related issues and works to build community through food.

  • Monterey Bay Aquarium
    A program of Monterey Bay Aquarium designed to raise consumer awareness about the importance of buying seafood from sustainable sources. We recommend which seafood to buy or avoid, helping consumers to become advocates for environmentally friendly seafood. We're also partners of the Seafood Choices Alliance where, along with other seafood awareness campaigns, we provide seafood purveyors with recommendations on seafood choices.

  • Slow Food USA/Martha’s Vineyard
    Slow Food USA envisions a future food system that is based on the principles of high quality and taste, environmental sustainability, and social justice – in essence, a food system that is good, clean and fair.

  • Chefs Collaborative
    At Chefs Collaborative, our growing community of chefs, farmers, fishers, educators, and food lovers is dedicated to promoting sustainable cuisine.
