It is a labor of love, this process of deboning the ribs and slow roasting. You’ll find all the deliciousness of skin-on whole pig roast, with added herbs and garlic mash.

Once the ribs have been carefully carved away, the hallows are filled with smashed herbs and garlic. The whole torso is wrapped and tied, then slow roasted. The crusty mahogany skin  and juicy meat, is the ultimate in pork dinners: served with roasted vegetables, and potatoes and more garlic…

We can roast this package with the head on or the head removed.
