Roasted Brussels Sprouts with Spices

2 lbs Brussels sprouts trimmed and cut in half
3 tablespoons coconut oil
2 shallots minced
2 teaspoon curry powder
1 teaspoon nigella seeds
1 teaspoon yellow mustard seeds
1 teaspoon sea salt

Preheat oven to 350°.

Melt the coconut oil in a large cast iron skillet. Add shallots and sauté for 5 minutes. Add the spices and mix well. Add Brussels sprouts and coat with oil and spices and turn the skillet on high for 2-3 minutes, stirring constantly .

Remove from stove top and place in preheated oven and cook for 30-40 minutes until just brown and cooked through. Serve warm.
