4 organic red peppers
3 bunches of asparagus
3 bulbs fennel
1 bunch chard chopped
½ cup lemon juice
2 cups extra virgin olive oil

Salad of Roasted Beets, Grapefruit, Avocado and Pomegranate

Serves 6
This is my favorite winter time salad.
I love to serve this with our potato latkes or for lunch with bacon.

1-1/2 pounds beets (3 medium) – green tops removed/save for another use
Olive oil
Kosher or sea salt
fresh ground pepper
2 ripe avocados
1 red onion sliced thin

1 large pomegranate

Quinoa Salad with Shaved Carrot

For the Dressing:
1 Clove Garlic
Zest of 2 Limes
2 Tablespoons Scallions
1/2 jalapeno, seeded and minced
1/2 tsp Cumin Seeds
1/2 tsp Coriander
1/2 tsp Dry Mustard
1/3 Cup Olive Oil
1/3 Cup Orange Juice
2 Tbl Chopped Cilantro
Cook quinoa 2 cups water to 1 cup grain and let sit to room temperature.
