Autumn Fruit Leather

There is nothing like a blue September sky day with rays of sun that can make a raspberry burst, with hints of fall crispness.
September and October is my favorite time of year and I always call raspberries my favorite fruit because I can fully enjoy the perfectness of this fine berry. But yesterday the Autumn Olive may have taken the raspberries place!  Don’t tell! The red berries of this fruit always seem to stay for so long. On my property, it seems the fruit ripen well into December.  It is very forgiving in the laziness and tardiness of my harvesting and for that, I consider it a favorite. I have made jam, but this is the first time I have made fruit leather and I only wish I had done it earlier in my kids lives when fruit leather was a staple in my house. But it is so packed with nutrients and vitamins, that it may have to become a staple in my pantry. I took a walk with Russ Cohen this week and he shared this simple process for making fruit leather.
